Zaiyu works in the style of Kaiseki - a Japanese meal with many courses that requires unique techniques both in serving and cooking the food. He approaches Kaiseki in his own way, that is to 'enjoy life, eat and have fun'. S. Pellegrino and Acqua Panna were indispensable companions in this ultimate taste experience.
