It all happened at l’Ecole Ferrandi in Paris: Shintaro Awa, after a day of intense challenge, has won the France final of the S.Pellegrino Young Chef 2016 competition.
The signature dish that was crowned is Air Cured Mackerel with potatoes, highlighting both precision and correctness on the plate. Yannick Alléno, Alexandre Gauthier and Mathieu Viannay were the members of the French jury who chose the winner.
The sous-chef from Restaurant Epicure at Hotel Bristol in Paris will go on to represent France at the Grand Finale which will take place on the 15th October in Milan. The Young Chef cooked also an exclusive “Dinner amongst the Stars” with his mentor, Yannick Alléno, at the Grand Roue spectacular event in Paris.
Alléno will guide Awa through the intricate process of perfectioning his signature dish in the months ahead ready to compete against 19 other international finalists.
